WILD GARLIC OIL

15 minutes  Makes 500ml

INGREDIENTS 

You will need equal quantities of oil and wild garlic 

  • 500ml Grapeseed Oil

  • 500ml Wild Garlic Leaves, washed

METHOD

  1. Blanch the wild garlic leaves in boiling water for 30 seconds, you may need to do this in batches. Refresh in iced water, squeeze out an excess water so you are left with a dry pulp.

  2. Roughly chop the leaves and add to a blender

  3. Blend on a low speed whilst gradually adding the oil. Continue for 4 minutes until thoroughly combined and bright green.

  4. Pass through a fine sieve and chill

TIP: The prepared oil will freeze well allowing you to use it when not in season.
