WILD GARLIC BRUSCHETTA

15 minutes Serves 4

INGREDIENTS

  • Selection of ripe tomatoes, halved and quartered

  • 2 cloves garlic, crushed

  • 1 tbsp extra virgin olive oil

  • 1 tsp balsamic vinegar

  • sea salt

  • black pepper

  • 4 tbsp wild garlic pesto 

  • 1 baguette, cut into slices

  • 50g Parmesan, shaved 

  • handful of basil leaves

METHOD

  1. Combine the garlic, olive oil, balsamic vinegar, salt and pepper to make the dressing. Add the tomatoes and set aside.

  2. Toast the baguette slices, while still warm spread over the wild garlic pesto and top with the tomato salad.

  3. To serve garnish the bruschetta with basil leaves and Parmesan shavings
