SPRUCE HONEY

INGREDIENTS

  • 1kg clear runny honey

  • 200g spruce pines, washed and dried

METHOD 

  1. Warm the honey in a saucepan until easily stirred

  2. Meanwhile bruise the spruce needles with a rolling pin, then stir into the honey

  3. Pour the spruce honey in to a sterilised jar. Store in a cool dry place.

  4. To use the honey heat and strain out the needles
