
SPRUCE HONEY

INGREDIENTS
1kg clear runny honey
200g spruce pines, washed and dried
METHOD
Warm the honey in a saucepan until easily stirred
Meanwhile bruise the spruce needles with a rolling pin, then stir into the honey
Pour the spruce honey in to a sterilised jar. Store in a cool dry place.
To use the honey heat and strain out the needles
