20 minutes, plus infusing time Makes 500ml


  • 500ml white wine vinegar

  • 100g douglas fir needles, washed and dried


  1. Bruise the fir needles with a rolling pin, add to a saucepan of water and simmer for 3 minutes. 

  2. Strain the needles the. Add to a container, top with the vinegar. 

  3. Refrigerate for 72 hours to allow the mixture to infuse

  4. Strain the mixture through a fine sieve and store in a sterilised bottle
