
FIR VINEGAR
20 minutes, plus infusing time Makes 500ml
INGREDIENTS
500ml white wine vinegar
100g douglas fir needles, washed and dried
METHOD
Bruise the fir needles with a rolling pin, add to a saucepan of water and simmer for 3 minutes.
Strain the needles the. Add to a container, top with the vinegar.
Refrigerate for 72 hours to allow the mixture to infuse
Strain the mixture through a fine sieve and store in a sterilised bottle
